🛡️ Quality & Certifications

Build the dossier, arrive ready for the audit

Whether you are an owner, a quality manager or the food business operator of an artisanal food company, KoreLab is the tool with which you build, keep alive and demonstrate your self-monitoring system. Versioned HACCP manual, hazard analysis by process step, tamper-evident records, batch traceability and a complete dossier ready to hand over to the certification body. A single place for HACCP self-monitoring and — above all — the voluntary certifications (IFS Food, BRCGS, ISO 9001/22000, FSSC 22000), updated in real time.

In short: KoreLab does not issue certifications and is not "Accredia-accredited". KoreLab prepares you and accompanies you towards certification: it keeps the dossier in order, up to date and verifiable, so you arrive at the audit with everything ready. The certificate is issued by a certification body, not by us.

HACCP self-monitoring is always the foundation. The Certifications suite can be activated on any plan (add-on +€19/month) and is already included in the Qualità plan and in Pro.

The food compliance problem

Anyone who manages food safety knows it well: the system exists, but it lives scattered everywhere and struggles to keep pace with production. And when the audit arrives, rebuilding everything by hand costs days and nerves.

🗂️

Scattered documentation

The manual in one folder, technical sheets in another, records in a binder, assessments in old emails. At the audit nobody can find the latest version and no one knows which one is valid.

✍️

A manual to update by hand

Every change to the process forces you back into the Word manual, re-checking references and realigning the hazard analysis. It gets put off, and the document falls behind the reality of the workshop.

📝

Paper or Excel records

Sheets that get lost, get wet, get filled in at the end of the week "from memory". An Excel sheet can be changed without leaving a trace: it offers the auditor no guarantees about who wrote what and when.

😰

Stressful audits

The days before the audit turn into a race: binding folders, hunting for evidence, hoping nothing is missing. "Last minute" preparation is the real hidden cost of certification.

⚠️

Non-conformities and penalties

An unrecorded out-of-limit temperature, an expired calibration, a corrective action never closed: omissions that become non-conformities at audit and, on the mandatory side, a risk of penalties.

🚨

Difficult recalls

When you need to trace from a raw-material batch to the finished products and the customers to alert, doing it by hand on paper delivery notes takes hours — exactly when time is the thing you don't have.

🥜

Allergens you can't get wrong

Allergens are a critical legal and safety point: they must be tracked per ingredient, assessed as a hazard and managed in cross-contamination. A mistake here is unforgiving.

🔁

More standards, multiplied work

If one customer asks for IFS and another for BRCGS, you risk redoing the same evidence three times. Without a mapping between standards, each scheme looks like a system of its own.

KoreLab was created precisely to remove this friction: a single source of truth, always up to date, with dated and tamper-evident proof. The system is no longer "a burden to keep in order", but something you build while you work.

What you can do with KoreLab

The Quality suite covers the whole journey: from the hazard to the dossier. Every function is linked to the real master data of the management system (products, raw materials, suppliers, batches), so evidence is born from the company's true data — and each one brings a concrete benefit at audit and in day-to-day work.

📚

A single multi-standard dossier

One quality dossier for HACCP and for all the voluntary standards you need, with cross-mapping of clauses. Benefit: no parallel systems, a single source of truth for every auditor.

📖

Versioned manual + standard texts + PDF

Sections with a life cycle (draft → approved → obsolete), tracked history and revisions, cover and table of contents with real page numbers, "Generate standard text" across 43 bilingual IT/EN sections and PDF export. Benefit: the manual always stays aligned with reality, and you start from text already written instead of a blank page.

🔬

Hazard analysis by process step

Flow diagram, biological, chemical, physical, allergen and fraud hazards with a 5×5 Probability × Severity matrix and a 1-5 legend always visible, plus a Codex decision tree that automatically classifies CCP / oPRP / PRP. Benefit: a methodical and defensible analysis, without forgetting hazard categories.

🌡️

CCPs, limits and monitoring with automatic verdict

Critical points with a code, critical limits from a reusable library with an append-only history of the "why", a monitoring plan and corrective actions. An out-of-limit value opens a Non-Conformity on its own. Benefit: the verdict is calculated from the data, not declared in words.

Gap analysis per standard + dashboard

Requirement status for every active standard (Compliant / Partial / Non-compliant / N.A. with justification), a coverage dashboard, the penalty framework with clickable laws and unification of requirements across schemes. Benefit: you see at a glance what is missing and how ready you are.

📋

Append-only ALCOA+ records (~29 templates)

Temperatures for chillers/blast chillers/cooking, cleaning, goods acceptance, CCP monitoring, calibration, foreign bodies, personal hygiene, finished-product release… Every entry is attributable, legible and dated; a correction is a tracked reversal, never an overwrite. Benefit: digital records compliant with ALCOA+ principles, with PDF printout.

📦

Warehouse, batches & traceability

Goods-in with supplier batch, delivery note, expiry and carrier; stock from an append-only ledger with FEFO; one-step-back / one-step-forward traceability (art. 18 Reg. (EC) 178/2002) and a recall test (mock recall) with the list of customers to alert. Benefit: trace the supply chain in minutes, not in half a day.

🤝

Supplier evaluations & FCM

Qualification and periodic evaluation of suppliers and food-contact materials (FCM) with radar and criteria, linked to master data. Benefit: the supplier management required by the standards, already structured and documented.

🛡️

Food Defense (TACCP)

Assessment of intentional threats to food safety with the same risk matrix (Vulnerability × Opportunity) and an always-visible legend. Benefit: you cover a requirement now present in IFS, BRCGS and FSSC.

🕵️

Food Fraud (VACCP)

Assessment of vulnerability to food fraud (adulteration, substitution, mislabelling) across raw materials and suppliers. Benefit: you demonstrate that you have analysed fraud risk, as required by the GFSI schemes.

🔏

PIN signature + hash-chain seal + integrity check

Operators with a PIN signature verified on the server (bcrypt, with lockout) and a chained SHA-256 integrity seal that cannot be forked. "Integrity check" recalculates the chain and confirms "✓ chain intact". Benefit: your evidence moves from "trust me" to "check it yourself".

🗄️

Print the dossier + 10-year ZIP archive

A PDF of every record with the company header, a complete "Print dossier" and a self-verifiable 10-year ZIP archive (dossier + integrity manifest + standalone verifier, readable even without KoreLab). Benefit: long-term retention and independence from the software.

🤖

KoreLab AI Assistant

An assistant with your own keys (BYOK Gemini/OpenAI/Anthropic), based on RAG with a "cite-or-abstain" guardrail: it answers on your data or abstains, without making things up, and guides you in using the tool. Benefit: quick help on your documents, available in the plans that include AI.

📅

Deadline planner + Non-Conformities / CAPA

A unified deadline planner with regulatory deadlines filtered by active standard (you only see what concerns you), Non-Conformities and CAPA with the full cause → correction → action → verification → closure cycle, plus equipment with codes and calibration deadlines. Benefit: no more forgotten deadlines or corrective actions left open.

The standards you manage

HACCP is the mandatory foundation, always active. On top of it you add the voluntary standards the market asks of you — single or combined. With several standards active, equivalent requirements are unified: a single piece of evidence covers multiple clauses.

⚖️

HACCP — mandatory

What it covers: self-monitoring based on HACCP principles, mandatory in Italy and the EU (Reg. (EC) 852/2004 art. 5) with the traceability of Reg. (EC) 178/2002 art. 18. Who needs it: every food business, always. It is the foundation KoreLab keeps alive by default.

🏷️

IFS Food v8 — voluntary

What it covers: the safety and quality of food products, in particular private-label products. Who needs it: those who supply, or want to supply, large-scale retail, especially in Europe. Requirements and clauses ready for the gap analysis.

🔖

BRCGS Issue 9 — voluntary

What it covers: the Global Standard for Food Safety, recognised by GFSI. Who needs it: those who export and those who work with retailers and international markets, where BRCGS is often the required calling card. Clause mapping included.

📐

ISO 9001:2015 — voluntary

What it covers: the quality management system, the organisational framework and continuous improvement. Who needs it: companies that want to structure their processes and demonstrate a quality system, even beyond food alone.

🧪

ISO 22000:2018 — voluntary

What it covers: the food safety management system along the entire supply chain, integrable with the other management systems. Who needs it: those who want a process approach to food safety, internationally recognised.

🌐

FSSC 22000 v7 — voluntary

What it covers: a GFSI-recognised scheme, based on ISO 22000 plus sector prerequisite programmes. Who needs it: those who serve international customers and groups that require a complete GFSI scheme.

Activation is per company: you can keep HACCP only, or the combinations you need, changeable at any time. The cross-mapping of clauses recognises equivalent requirements across schemes and unifies them — so you don't redo the same work two or three times on the same evidence.

What improves: the concrete benefits

Put into practice, here is what changes in the life of the company when self-monitoring lives inside KoreLab.

🧘

Ready and calm at the audit

Everything is in one place, up to date and verifiable: the manual at its latest version, signed records, a printable dossier. No last-minute scrambles, no folders to bind the night before.

⏱️

Less time on paper

Standard texts already written, digital records, quick selection from master data, PDFs generated in one click. Time goes back to production instead of bureaucracy.

🛡️

Less risk of non-conformities and omissions

The out-of-limit verdict opens the Non-Conformity on its own, allergens are tracked per ingredient, deadlines warn you and traceability is always complete. Less room for human error.

🚀

Recalls handled in minutes

The mock recall traces from a batch to all the finished products and the customers to contact in a few clicks. When a recall is real, speed is everything.

🔒

Tamper-evident proof

Append-only records, PIN signature and a verifiable SHA-256 hash-chain seal make evidence attributable and intact over time. Honest legal value: a simple electronic signature, but resistant to internal dispute.

🧩

Multi-standard without multiplying the work

A single piece of evidence covers multiple clauses thanks to the mapping. Adding a standard does not mean starting from scratch: it means activating the clauses already covered and closing the few remaining gaps.

How it works, step by step

From free sign-up to an audit-ready dossier, with no leaps into the dark.

1. Start from HACCP

You sign up for free and set up the master data (products, raw materials, suppliers). HACCP self-monitoring is the always-active foundation: you begin here even without activating anything else.

2. Activate the standards you need

You switch on the Certifications suite and choose, for your profile, the voluntary standards required (IFS, BRCGS, ISO, FSSC). The gap analysis populates and equivalent requirements are unified.

3. Build the manual and the analysis

You generate the standard texts of the manual, map the flow diagram, assess hazards by step with the 5×5 matrix and let the Codex tree classify CCP, oPRP and PRP.

4. Fill in the records every day

Operators sign records with their PIN (temperatures, cleaning, goods acceptance, CCP…). Every entry is sealed and can no longer be modified: the system builds itself while you work.

5. Monitor deadlines and non-conformities

The filtered deadline planner warns you about calibrations, regulatory deadlines and verifications; Non-Conformities and CAPA follow the full cycle through to documented closure.

6. Print the dossier and face the audit

You generate the complete PDF dossier, export the self-verifiable 10-year ZIP archive and present yourself to the certification body with everything ready, ordered and verifiable.

Who it's for and how to activate it

Three profiles, three paths. Certification can be activated at any time, and those who already have it see "✓ already active". Prices exclude VAT.

What KoreLab does and what it doesn't

Honesty first: so you know exactly what you can rely on in front of the auditor — and what remains down to you and your consultant.

AspectWith KoreLabWhat it is NOT
CertificationIt prepares and accompanies you; a dossier ready for the bodyWe do not issue certificates, we are not "Accredia-accredited"
SignatureSimple electronic signature (PIN + SHA-256 hash-chain seal)Not a qualified signature (QES) nor a timestamp
Regulatory textsIndicative bilingual drafts with clause referencesNever the full text of the standards; not legal advice
Integrity of proofAppend-only ALCOA+ records, independently verifiableTo be adapted and validated together with your consultant
TraceabilityOne-step-back / one-step-forward and mock recall in minutesDepends on the quality of the goods-in data you enter
The texts generated are indicative and must be verified and adapted by the consultant to the company's reality: they do not constitute legal advice and never reproduce the full text of the standards. The signature in KoreLab is a simple electronic signature (operator identity via PIN + chained integrity seal), not a qualified signature nor a timestamp. KoreLab is a management and self-monitoring tool: it does not certify and does not issue certifications, it prepares you and keeps the dossier ready for the audit and for the certification body.

Do you work with a consultant?

KoreLab is designed so that you and your consultant work on the same data, with a single hash-chain. The consultant accesses your live dossier in read-only and sends you change proposals signed with their PIN: it is you (RA/RGQ) who reviews, approves and signs with your PIN. Double signature, sealed and tracked change. The classic "the consultant prepares, the company validates" made digital and tamper-evident.

Frequently asked questions

The answers most often sought by owners, quality managers and food business operators.

Does KoreLab certify me? +
No. KoreLab is a management and self-monitoring tool: it prepares you and accompanies you towards certification, keeping the dossier in order and ready for the audit. The certificate is issued by an accredited certification body, not by us, and KoreLab is not "Accredia-accredited".
Is the PIN signature legally valid? +
It is a simple electronic signature: it identifies the operator via a PIN verified on the server (bcrypt, with lockout) and seals the record with a chained, tamper-evident SHA-256 hash. It is not a qualified signature (QES) nor a timestamp. It serves to make proof attributable and intact over time, in line with ALCOA+ principles.
Are the regulatory texts reliable? +
They are indicative, bilingual (IT/EN) drafts with clause references, designed to let you start from a base already written. They must nonetheless be verified and adapted by the consultant to the specific reality of your company: they are not legal advice and never reproduce the full text of the standards.
Can I manage several standards at once? +
Yes. You activate the standards for your company (HACCP only, or combinations of IFS Food v8, BRCGS Issue 9, ISO 9001:2015, ISO 22000:2018, FSSC 22000 v7). The cross-mapping recognises equivalent requirements and unifies them, so a single piece of evidence covers multiple clauses and you don't redo the same work several times.
How do traceability and mock recall work? +
You record raw materials with the supplier batch, delivery note, expiry and carrier; stock is born from an append-only ledger with FEFO logic. Traceability is one-step-back / one-step-forward (art. 18 Reg. (EC) 178/2002): given a batch, you trace in a few minutes to the finished products and the customers to alert with the simulated recall test (mock recall).
How secure is the data (GDPR)? +
KoreLab is a cloud application: your data stays yours and the integrity of the records is guaranteed by the independently verifiable hash-chain seal. You can export the PDF dossier and a self-verifiable 10-year ZIP archive at any time, readable even without KoreLab. For details on the processing of personal data, see the site's Privacy page.
Do I need a consultant? +
For basic HACCP self-monitoring you can work independently with KoreLab. For voluntary standards (IFS, BRCGS, ISO, FSSC) having an HACCP consultant is standard practice: with KoreLab you work on the same data and the consultant sends you signed change proposals, which you approve and sign (double signature). See the dedicated consultants page.
How much does it cost to activate certifications? +
Three paths: the Certifications add-on at +€19/month (€190/year) on Free or Starter; the Qualità plan at €24.90/month (€249/year) with the suite included and the quality side only; the Pro plan at €34.90/month (€349/year) with everything included plus AI. Until 31 October 2026 there is the Early Adopter promo of -25% on all paid plans. Prices exclude VAT.
Can I start for free and activate certifications later? +
Yes. Start with the Free plan and HACCP self-monitoring, get comfortable with the tool, and activate the Certifications suite (via add-on or by moving to the Qualità/Pro plan) when an audit or a customer requires it. Nothing is locked behind a paid sign-up just to try the foundation.

Arrive at the audit with the dossier already in order

Start for free with HACCP self-monitoring, then activate the Certifications suite when you need it. You and your consultant on the same data, always, with verifiable proof.
